There are thousands of ways and thousands of recipes for vegetable soups. This is one that I particularly like. Very nice also in the summer.
INGREDIENTS
- 3 carrots
- 1 parsley
- 1 zucchini
- 1 onion
- 3 cloves garlic
- 1/2 can tomatoes
- 4 fresh tomatoes
- freshly ground black pepper
- cayenne pepper
- rice miso
METHOD
- Cut the carrots, parsley, garlic, onion and sauté them on hot oil of choice.
- Add zucchini, tomatoes and water (add as much as you want).
- When done, add cayenne and miso. Heat together for about 5 minutes.
- Serve with fresh cilantro.
